Cooking Again - Pork Tenderloin and Black Bean Salad
Life's back under control, and we're back to cooking again. Last night Drew did the chef work, and he made a delicious Chili-Rubbed Pork Tenderloin with grilled vegetables and Black Bean Salad.
The Rub
1 tbls packed brown sugar
1 tbls chile powder
1 tsp cumin
3/4 tsp salt
1/2 tsp garlic powder
1/4 tsp ground black pepper
2 lbs. Pork tenderloins - trimmed of fat
2 tsp olive oil
In a small bowl combine all of the rub ingredients, mashing with a fork to mix thoroughly. Coat the pork with olive oil and then season evenly with the rub. Allow the pork to stand at room temperature for 20 minutes before grilling.
Heat grill to medium heat. Grill the pork over direct medium heat, turning every 5 minutes, with the lid closed as much as possible until the outsides are evenly sealed and the internal temperature reaches 150. It should take about 15-20 minutes. Remove from the grill and let rest 3-5 minutes before serving.
The outside should be crispy and the inside should be moist and free of any pinkish coloring. AMAZING.
Marinated Grilled Vegetables
Chile Lime Marinade:
1/4 cup soy sauce
2 tbls lime juice
1 tsp cumin
1 tsp chile powder
1 tsp onion powder
1/2 tsp ground black pepper
Let zucchini, squash and red onion sit in marinade for 20-30 minutes, then grill over medium heat until tender and slightly charred on the outside.
Black Bean Salad
2 cans black beans
2 cups grape tomatoes cut in half
1 cup finely diced white onion
1/2 cup chopped Italian parsley leaves
2 tbls olive oil
1 tbls lime juice
2 tsp minced garlic
1/2 tsp paprika
1/2 tsp salt
Mix all the ingredients together in a big bowl and let rest at room temperature for 45 minutes.
That's all folks. Enjoy

My Heart
Obviously I've been MIA, but I have a very good excuse. The love of my life has made her appearance, and she has taken over my world and my life. We are absolutely obsessed! I will have much more to say when I get a chance to sit down here and recap the past week or two, but for now, here's a sneak peak at my little angel.

Two weeks till LJC's due date! I would love her to come early and I'm preparing myself mentally for her to come late, though I'm also prepared to try every old wives' tale in the book to coax her out. Will keep everyone updated as things progress! I'm off to turkey trot/jog/walk in the morning before the annual parade watching with hopes to get things moving along...
The furry babies are ready for her to get here too. They can't wait to meet baby sister!
Grateful
I'm especially thankful this year...for my family, my friends, our health, and all of our continuous blessings. I wish everyone a wonderful thanksgiving full of love and happiness. Happy thanksgiving!
Leighton's Nursery
I finally tool some pictures of Leighton's room! It is definitely my favorite room in the house and I love just sitting in there in the rocking chair looking at her walls and her books and her pretty clothes and imagining her in my arms and how she will change our lives.
The bookshelf next to the crib and crib are from pottery barn, and the dressers and the bookshelf by the window we already had in our former guest room.
I found her bedding at Carousel designs, and I bought some of the bedding fabric, and my mom and I sewed the drapes and the shower curtain to match the crib set.
Here is her pretty bathroom with her own monogrammed towels and the bow-holder I made with her already large collection of bows!
The little rocking chair was Drew's when he was a baby, and we repainted it white for her.
My little Charlotte loves the toy boxes and has been trying to steal all of her new stuffed animals. We are anticipating some fights over the toys...

4 week countdown
Holy Moly only 4 weeks (and 2 days) to go! Everyone tells me it has gone by so fast, and I partly agree considering I can't believe she's almost here already. Although, when I think about it, I've been pregnant since March and that's a really long time! Almost a year! So it's gone by both fast and slow, but I have a feeling time is about to speed up exponentially!
My baby shower was Sunday, and it was absolutely amazing. My girls could not have put together a more gorgeous and thoughtful celebration, and I am eternally grateful to them. Getting teary eyed thinking about it. More on that later once I download all the pictures.
We did our baby bump pix on Friday in St. Augustine, both downtown and at the beach, and I haven't seen any yet, but am anxiously awaiting a sneak peak. Will post a couple of those too when I get them. I am so immensely grateful to Kelly, (who did our wedding and instantly became one of my favorite friends) for doing these for us. She wanted to give us the bump pix and newborn pix as a gift, and it means so so much to us. She's a special one, and obviously extremely talented as well.

Chicken Corn Chowder as Promised
It's warm and chunky, and a perfect healthy dinner! You can't go wrong with this soup, and you can change it up with any ingredients that suit your fancy. Add more potatoes, add more veggies, change the protein...Go crazy!
Chicken Corn Chowder
1-2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1 cup peeled and diced potatoes
2 tablespoons all-purpose flour
*1-2 tablespoons cornstarch (if necessary for thickening)
3 cups skim fat milk (if you like it thicker you can do 1 or 2% but I was very happy with skim milk)
2 cups chicken broth
2 chopped cooked chicken breasts + olive oil, salt and pepper for roasting *see below for amazing roasted chicken
1 1/2 cups fresh or frozen corn kernels (about 3 ears)
1 teaspoon chopped fresh or 1/4 teaspoon dried thyme
1/4 teaspoon ground red pepper
1 teaspoon salt
1 (14 3/4-ounce) can cream-style corn
*For added heat: add 1 jalapeño pepper, seeded and minced or can of green chilis
Simple Roasted Chicken
For flavorful delicious chicken, I think roasting it is your best option. You definitely can boil or grill the chicken, or buy a pre-cooked rotisserie, but roasting your own chicken is so easy. I like using chicken with skin and ribs because it adds a lot of flavor, and after its done cooking, cut the meat off the bone and remove the skin. You can use boneless, skinless too, so just do what you like.
Drizzle the chicken with a little olive oil and rub in course salt, pepper, and garlic powder. I use seasoned salt too, for a little extra flavor.
On a baking sheet covered with heavy duty foil, drizzle and coat breasts with olive oil. Season with salt and pepper on both sides. Bake uncovered at 350 for 35 to 40 minutes. If you're using skinless breasts, simple cover with foil so the meat does not dry out.
Remove meat from the bone and remove the skin, then cut up or shred chicken as needed for your recipes.
Soup Preparation
Heat the olive in a large Dutch oven over medium heat.
Add onion, celery, potatoes and jalapeño/chilies; cook for 3 minutes or until tender, stirring frequently.
Add flour; cook 1 minute, stirring constantly.
Stir in the broth.
Stir in the milk and remaining ingredients and bring to a boil;
Reduce heat to medium low and cook until thick. Add corn starch to thicken if necessary.
Turn to low and let it simmer until you're ready to eat.

We installed the car seats this weekend in both of our cars. I washed all the clothes we already have. Diapers and wipes are stocked. Garage and all closets have been raided, cleaned and reorganized - nesting anyone? Anything else essential I should be thinking about???
Things I still need to do:
1. get carpet professionally cleaned in baby's room
2. stock up medicine cabinet
3. finish buying whatever essentials I'm missing
4. finish christmas shopping (I've been planning ahead! yay!)
5. find more activities to distract myself so I don't go crazy

THE Best Carrot Cake Recipe
For my mommy's birthday last week, I made her a scrumptious carrot cake with cream cheese frosting. The recipe is adapted from a Gainesville Junior League cookbook and honestly, it is THE BEST carrot cake I've ever tasted. The moistness is like nothing I've ever experienced. I want to make another one asap - I'm craving more of this one so much already!
Carrot Cake
1 1/4 cup canola oil (*see below for applesauce substitute & applesauce substitute post here)
1 cup firmly packed light brown sugar
1 cup granulated sugar
4 large eggs
1 cup all purpose flour
1 cup - less 2 tablespoons whole wheat flour
1 tsp salt
2 tsp baking soda
2 tsp baking powder
2 tsp ground cinnamon
1 tsp allspice
3 cups shredded raw carrots, packed (6-7 large carrots)
1 8-ounce can crushed pineapple
12 cup finely chopped pecans (optional)
Preheat oven to 350.
Start by grating, by hand or with a food processor, the large carrots until finely shredded.
In a large bowl sift together flours, salt, baking powder, baking soda, cinnamon and allspice.
If substituting applesauce: use 1 cup unsweetened applesauce plus 1/4 cup canola oil
In a separate large mixing bowl blend the sugars and the oil and/or applesauce.
Add eggs one at a time, beating until well blended.
Add the flour mixture 1/3 at a time to the sugar/oil mixture and blend with mixer on low speed or mix with spatula by hand until just blended.
Stir in the carrots, and then then pineapple and nut.
Pour batter in 2 9-inch round cake pans.
Bake at 350 for 35-40 minutes, and be sure not to over-bake, especially if you used the applesauce substitute.
Allow to cool for 10 minutes in the pan, then remove an allow to finish cooling on a rack.
Frost each layer with yummy yummy cream cheese frosting and stick it in the fridge until you're ready to eat so the frosting hardens a bit and stays fresh.
Can you taste the moistness!? Heavenly!
Cream Cheese Frosting
1 8-oz package cream cheese at room temp
1/4 cup unsalted butter at room temp
2 cups powdered sugar
1 1/2 tsp vanilla extract
1 tsp grated lemon zest (optional)
Cream together cream cheese and butter until fluffy. Add powdered sugar and beat until well blended. Beat in vanilla.
