mama marengo

Gnocchi

2 large russet potatoes
1 large egg beaten
1-2 cups flour
salt

I had never even heard of gniocchi until I started dating drew a few years ago. His mom is a 2nd generation Italian and his grandfather who I was lucky enough to spend a good amount of time with was a first generation Marengo. He loved his wine and his gniocchi. Any time we go to an Italian restaurant drew’s mom looks for gniocchi and orders it in her family’s honor. A couple years ago, shortly after grandpa Marengo passed away, we thought we should try it, thinking it can’t be that hard. Well, it didn’t turn out great. It wasn’t a disaster, but it was sticky and not exactly what we hoped for. Turns out, it’ snot that hard, it’s just tricky and once you figure it out, it’s pretty simple and fun to make.

Here’s the deal with gnocchi – you have to remove all of the moisture from the potatoes to avoid sticky tacky gnocchi dough… therefore, you must use russet potatoes (Idaho potatoes) because of their low moisture content. A lot of recipes boil the potatoes, but I have decided that baking them is best because a lot of the moisture is removed during the baking process. Poke the potatoes so that moisture may escape and bake for 45 minutes at 400 (until fork pierces easily). Remove the potatoes from the oven, slice them open and let them steam for 10 minutes. Then scoop out the innards and run through a food mill or potato ricer into a big bowl. You can also use a grater and actually grate the potatoes which gives a good texture and releases a lot of steam as well.

Next, spread the grated potatoes out and let the potatoes finish steaming for another 20 minutes or so. Let all that moisture get out of them! Carve out a little hole in the middle of the potato mound and drizzle the beaten egg in. Put the potatoes in one bowl and the flour in a separate bowl.

Start sprinkling the flour across the stop and incorporate the flour into the potatoes – I use a bamboo spatula for this. You don’t have to use all the flour, you want to keep adding the flour gradually until the dough is like playdough – light and easily kneadable, but not sticky.

Don’t add too much flour or the dough will be dense and tacky! You want it to be dry-ish and easily knead-able.

Once dough is a good consistency, cut it into eighths and roll out into logs about the thickness of your thumb, then cut the pieces into little nuggets.

Roll the nuggets down the gnocchi board for the classic gnocchi lines (rolling it down a fork works here too). Use a light but firm touch.. you’ll know when you do it and you’ll get the perfect little ridges. Keep practicing.

Now boil some water, throw in the gniocchi (about 20 at a time) and when they’re done they’ll pop up to the top. Use a slotted spoon to fish them out and put them on a platter until the rest are all done.

You can eat them freshly boiled with sauce of your choice. I like to sauté them in olive oil and the add a bunch of veggies and a sauce.

My favorite sauce is a roasted red pepper sauce. Throw red peppers on the grill until completely charred and black.

Then put the charred peppers in a ziplock bag and let them sweat for 10 minutes. The black charred skin will come off easily.

Make a basic tomato sauce (garlic, onion, tomato puree…recipe another day). Run the roasted red pepper through the food processor and add to the tomato puree.

Amazing sauce! Add some chicken and veggies and enjoy the deliciousness.

i miss christian siriano and carol hannah

I have been so disappointed with Project Runway this season! I have not been impressed with the designers at all (with the exception of Mondo. and I actually like April). It's been so petty and some of the designers are just rude! I realized last night that I'm not excited to see who goes to fashion week at all. Obviously Mondo will be there and the other three could go either way. Christian Siriano is very missed. Remember some of Christian's amazing dresses?

This one was crazy! But without the head/neck? piece, this dress is pretty spectacular.

I'd love to wear this one to a wedding or cocktail party.

and how beautiful is this one?
christian siriano

If I were ever to get the chance to go to a red carpet event, I want a dress just like this. Oh so in love.

Where are the inspired talented designers this season? Mondo had one dress that was pretty wild and creative, but he's still not near as appealing to me as Christian was.

I also loved carol hannah. I loved her style and would actually be able to wear her clothes in my real life.

I would buy this dress right now!
carol hannah

She also has a really pretty wedding collection. I wish I had seen this before our wedding, because I definitely would have bought this dress to change into after the wedding or to wear to the rehearsal dinner.

Some of her bridesmaid dresses I really like also. This would be really pretty for a bridal party, or to wear on its own to a summer wedding or evening garden party.

we'll see how the final 2 episodes go. On another note, Heidi is as beautiful as ever.

the impossible duet that may be possible

excuse me sir, but i believe you're holding the violin the wrong way. okay you're excused because this is really cool and you're really talented. It's a difficult piece, especially to play both parts and synch them, but he's good, really good. I play both violin and cello, but I am pretty positive I couldn't do this without a ridic amount of practice. Luckily I play my violin regularly, and I have an amazing friend who plays the cello like a goddess and can play anything, so next on our friend to-do list is to play this together, and I'll be a happy girl. Jules, get on it! xoxox. if we get good enough, i'll post our version next to his (but I'll hold the violin like a normal boring person)

watch and enjoy with awe

must buy this now

LS Who?

At least that's what I hope we're saying after this weekend. My beloved Gators had a rough weekend last Saturday in Tuscaloosa. I sure miss Tebow, but Brantley has some big shoes to fill and he's doing his best. Here's hoping we turn it around this weekend against the Tigers.

remember the famous tebow jump pass?? oh yeah, that would be the year we won the national championship. unbelievable!

Whatever happens, I am so excited because two of my best friends from WashU are coming into the swamp for the game and it's going to be a blast. Kate and Sean just got married a few weeks ago, and her hubby Sean decided to be a Gator fan as a kid (he grew up in Connecticut and def made a good choice). In fact, Sean and I were phone friends before we met in person, because on the night they got engaged, I was watching the gator's second tebow national championship game and got to talk to them both to celebrate their engagement and the gator win. He's especially excited to be in the swamp for the first time, and any excuse for Kate and Lex to be here is fine by me! hurry up and get here!

my kind of lingerie

my best friends threw me an amazing bachelorette party, oh about a year ago, at the Don Cesar in St. Pete. It was all kinds of fun, tanning, dancing, and craziness. gotta love your girlfriends. Over the weekend we had a lingerie shower night, and among some of my cute items were some lululemon boyshorts, some cute satin nighties, pink sparkle undies (from the one and only bethany claire), and my most favorite piece of kinky lingerie, my anthropologie apron. Do my friends know me or what?
apron

I have worn this apron out, and I am so in love with it. Anthro has so many cute aprons, I want all of them! They are a great bachelorette gift or shower gift for your girlfriends who like to be in the kitchen. Highly recommend as this has definitely been my most used linge gift.

I want to get some of these anthro oven mits to add to my kitchen collection. I love how colorful and fun they are!

Caitlin Moe

Most of my friends know caitlin moe already, but I have to post this amazing video she did with Mia Moretti for Alice and Olivia. Caitlin has been playing electric violin with Mia at insane parties and events across the country, including a Clinton Wedding. SICK! She's played at Perez Hilton's parties and fashion week, and has met all sorts of people and celebrities who want her at their events. So proud of my little sis and can't wait for her to take off even more than she already has.

This is the Alice and Olivia video that is featured on their website and in all NYC cabs. so obsessed!

She's also playing in the Trans Siberian Orchestra tour again this winter, so check out one of their shows if you can.
