Largest Cocktail Party in the World

We are so excited for the Florida/Georgia annual cocktail party in Jacksonville this Saturday! Not sure how great the Gators will do, since we've been pretty weak, but even if we play poorly, this is my favorite weekend of the year! Usually we see a ton of people we haven't seen in a while, and the last few years, I've gotten to reunite with some of my WashU friends who come down with one of their Georgia Alumni friends. small small world it truly is.

I have been blessed to have many wonderful friends spread all over the world, and though we don't get to see each other as often as I would like, we have managed to stay very close and keep updated on our lives and happenings. That said, I have lost touch with a few people who are very dear to me. Time just goes so fast, and before I realize it, we've gone months without speaking. Sometimes it's the distance that separates us, and sometimes it's just space, but I when I realize how long it has been since I've spoken to some of my friends, it hurts my heart. This week must be the week of getting back in touch, because a few of my friends with whom I lost touch have gotten in touch with me or vice versa, and I have had so much fun catching up and hearing about everything that's been going on. How amazing is it, that even after a lot of time has passed, we can just get back on the phone and it's like we never were apart.

Saturn Return

My best friend BC and I have birthdays that are 6 days apart. We both turn 27 this year, which she reminded me is coming up quickly when she asked me today, "Are you excited to turn 27?!?! It's the Saturn Return!!!"
I confessed to her I hadn't really thought about it, and I had to google "Saturn Return." Turns out, this birthday is a big deal, and I am excited!

Here's what I learned from wikipedia. The Saturn Return is a phenomenon that occurs at the ages of 27-30, 58-60, 86-88, coinciding with the time it takes the planet Saturn orbit the sun. Astrologers believe that as Saturn "returns" to the degree occupied at the time of birth, a person crosses over a major threshold and into the next stage of life. With the first Saturn Return, a person leaves youth behind and enters adulthood. With the second Return, maturity. And the third and usually final Return, a person enters wise old age.

The first Saturn Return represents the first test of character and the structures a person has built their life upon, goals are consolidated and people tend to gain a better vision of where they are going in life. There are added responsibilities and a person may reap the rewards from his or her hard work. Many major life milestones seem to happen around the ages of 29 and 30. This is why astrologers believe that the thirtieth birthday is such a major rite of passage because it marks the true beginning of adulthood, self-evaluation, independence, ambition, and self-actualization.

After reading about the Saturn Return and thinking about all the changes and transitions coming up in the new year, and the new things that I'm looking forward to next year, I'm definitely pumped for the Saturn Return! Starting a new job, our honeymoon trip, celebrating our 1st anniversary and settling into family life, making new friends as old ones leave, finally feeling settled with money and jobs and residency, finally letting go of worries and stresses and poisonous relationships. Here's to leaving youth behind and entering adulthood full steam ahead! (in 4 weeks)

Time to break out the pink running gear! I just registered for 26.2 with Donna, the National Marathon to Finish Breast Cancer in Jacksonville Beach on February 13, 2011.

The race begins near the Mayo Clinic Campus in Jacksonville, Florida and follows the course through the unique beach communities of Jacksonville Beach, Neptune Beach and Atlantic Beach with a detour onto 2.5 miles of beautiful hard-packed sand on the Florida coastline.

That means I have 17 weeks to train so I better get on it! I have the Ragnar Relay coming up on November 19-20 with 9 other girls where we run from St. Pete to Daytona Beach. We each run 3 times and it should take us about 26 hrs. That'll definitely be a good training race!

Unfortunately the fall weather has left us and it's back in the 80's again. But that doesn't have to keep us out of the fall spirit. I have my pumpkin spice and cranberry cinnamon candles burning and I'm doing a little fall decorating. I don't like to go overboard and I definitely like to keep it classy and understated. Here are some of my ideas for halloween and thanksgiving.

Here's what you need:
A clear jar, vase or some sort of container.
A small interior container to hold the water and flowers, such as a small water glass
Enough candy corn to fill the sides of your container. About 2 medium bags.
A variety of fall flowers, leaves and berries.

Partially fill the bottom of the large jar with enough candy corn to sit the interior container inside with both container tops even. Place the smaller glass inside the outer container and hold in place. Gently pour the remaining candy around the sides to fill the inside wall of the container. Fill the inner glass about half full of water and arrange your flowers.

I picked up a bunch of mini pumpkins at fresh market today, along with some scented pinecones and some wheat bundles. I love the natural look for bringing the holidays into your life.

I put bunch of the mini-pumpkins and some walnuts with the pinecones in a silver serving dish on our dining table. Looks good and smells great.

Lilly where were you 5 years ago?

okay, writing that just caused a little tear to well up in my eye, since I am more than 5 years out of college and my 10 year high school reunion is this May. Scary! I swear I still feel like a teenager sometimes, and now my little sister is a freshman at UCF in Orlando and was just initiated as a Tri-Delt. She is having an amazing time meeting new friends and living the college freshman life. I'm so happy she's loving college so much, and I get pangs of jealousy and envy as I remember just how much fun being in college was. Anyway, since she just got initiated, she gets to be the entirely spoiled little, and I was looking for some tri-delt stuff to buy her and I found that Lilly Pulitzer has sorority stuff now!

The prints are so cute! I want some of the swag for myself, but I'm debating if that's weird or not. The kappa print has little blue owls and keys and fleur-de-lis! Okay, I might want this bag still, maybe as a gym bag.

I want this kitchen

I can't wait to move into a house with a decent sized kitchen with ample storage space for all our pretty china and my kitchen gadgets. The townhouse kitchen just isn't cutting it, and most of our wedding presents and non-daily kitchen toys are sitting on shelves in the garage. It pains me, but until we can move, I can continue to dream up my perfect kitchen so when we do start looking, I know what I'm looking for.

I love all the cabinet space and all of the light. The window by the sink reaches all the way to the ceiling! My kitchen is so dark now since there is no windows on the sides of our townhouse, boo. I especially love the archway framing the kitchen and the gorgeous cedar beams on the ceiling. I love the idea of having an island in the center with enough counter space to prepare food, and also enough room to converse with friends or kids while you're working in the kitchen. I always love in movies when the family has their breakfasts at the island on the barstools before school. Definitely putting this kitchen in the memory bank.


When we were registering I picked out all white dishware from Juliska in the berry and thread print. I love it and it looks really classy and elegant when I want to go that route, but what I love most, is I can find cute colorful accent pieces to go with it and it really makes the kitchen table fun.
I found these cute little jars which I would love to put my most used spices and garlic in for easy access by the stove.

Oh anthropologie, you always find a way to get me, and this time I might get myself into trouble.
I'm innocently perusing the website today (thank god there is not an anthro in town or this could be very bad) and what do I find but this?

If you recall, I recently gushed over my amazing apron given to me by Julie, and then I discover the mini-me child's version on anthro? I mean, how can I not purchase this and stash it away for my future child? No I'm not expecting quite yet, but I am expecting that in the not so distant future, my daughter and I are going to be in the kitchen in our matching mommy and me aprons baking cookies and licking the bowl. ohhhh it's soooo adorable I can't stand it!!

Weekend

I didn't update any this weekend! Bad langley bad! But this weekend was full of fun activities and I just haven't had the chance to catch up, plus I left my Mac at the office over the weekend and that's probably a necessity to uploading some cooking pictures and writing a few posts.
Saturday morning I went on my long run from our house to downtown Gainesville where I met up with Team Clark for the breast cancer walk. It was a great turn out and the weather was perfect. After the walk we went to our traditional post walk brunch at the 43rd street deli. It's a definite Gainesville staple for some great brunch.
We then went to my parents house to watch the Auburn-LSU game with my parents who are big Auburn fans. Tigers win and it was fun hanging out with them and the pups all afternoon. After the game we came home and made some homemade pizzas, which I'll put up shortly. I've been trying to perfect a thin and crispy crust, and this was pretty close. We made two mini pizzas so we could try some different topping combos.

Sunday I did some work early in the morning and went on a run with my favorite LC. There were no church services since it was Faith in Action Sunday. Sunday afternoon my favorite cellist came over to practice for the Tapas and Tasting event we were playing at 4. I love playing with my Jules! We always have a lot of fun together and never leave without planning our next date. Looking forward to a girls night at do-art in the near future!

The Tapas and Tasting event was great! I wasn't sure what the actual event was for, but everyone brought some really fantastic dishes to share and they had a wine expert give a little lesson on wines and everyone got to taste a few. I got some good ideas for tapas I want to try, corn fritters with an asian/peanut butter type sauce, spinach and feta purses, hummus with yogurt, mango and pomegranate salsa, red pepper polenta, asian stuffed wontons and caramel cake. Definitely will be making some of these in the near future.

As for tonight, I'm making a french dish for dinner inspired by Drew and my favorite french restaurant in NYC, Balthazar.

We went there for dinner and breakfast when we were in the city last because it was so amazing. I bought him the cookbook as a present from my last trip to NYC and promised it was a gift that would keep on giving because I'd try a lot of the recipes.

more pumpkin goodness

My great friend lindsay requested some pumpkin cookies with white chocolate chips, so who am I to say no to that request? She has a big final trial coming up in law school, so I made a batch just for her to bring her good luck and to satisfy her craving, and wooooo they are scrumptious!
They're more cakey than chewy cookie texture and the white chocolate and pecans (if you use them) are the perfect flavor compliment to the pumpkin spice.

White Chocolate Pumpkin Cookies
2 ¼ cup flour
½ tsp baking soda
1 tsp pumpkin pie spice
1 cup butter
1 ½ cup dark brown sugar – can reduce to 1 cup if too sweet
1 cup pumpkin
2 eggs
1 tsp vanilla
12 ounces white chocolate chips
½ cup pecan halves (optional)

Beat the butter and sugar, add the pumpkin, eggs and vanilla and beat till smooth.

Mix the dry ingredients and gradually add to the mixer and incorporate. Stir in the white chocolate chips and nuts.

Spoon onto your silipat and bake at 300 for 20-22 minutes.

Let cool and enjoy with some coolwhip.

spaghetti squash

Super Simple Spaghetti Squash
Spaghetti Squash can be used in a lot of different recipes, or it can simply be enjoyed cooked with a little butter, and salt and pepper. A great way to eat spaghetti squash is to use it as a substitute for pasta. It actually looks and tastes like spaghetti and is a great healthy substitute for heavy carbs .

1. Preheat oven to 375.
2. Cut squash in half length wise (You need a big sharp knife).
3. Scoop out the seeds
4. Cover a cookie sheet in foil.
5. Place squash skin side up on sheet.
6. Cook for 40 minutes or until tender.
7. Use a big fork and scoop squash from stem to bottom out of the rind.
8. Season, mix with sauce, roasted veggies, beans, meat...

It’s the perfect base for all of your fall meals!


Ways to serve, add 1/2 cup beans of your choice & 2 large store-made, fresh turkey meatballs or italian sausage for the carnivore in your life plus some fresh grated Parmesano.

p.s. a 4 oz serving of pasta is about 400 calories...a 4 oz serving of spaghetti squash is only 37 calories, fabulous alternative!

I come across this recipe for a spaghetti squash and chard gratin on a cooking blog (Closet Cooking) not too long ago and it sounded really interesting. It's extra creamy and it makes a lot, so you can have some leftovers for tasty lunches this week.

Spaghetti Squash and Chard Gratin
Ingredients:
1 spaghetti squash (cut in half lengthwise and scooped clean)
1 tablespoon olive oil
1 onion (diced)
2 cloves garlic (chopped)
1 bunch chard (rinsed and cut into 1 inch thick slices)
4 green onions (chopped)
1 egg (lightly beaten)
1/2 cup sour cream
1/2 cup cottage cheese
1/2 cup parmigiano reggiano (grated)
salt and pepper to taste
1/4 cup parmigiano reggiano (grated)

Directions:
1. Roast the spaghetti squash halves in a preheated 400F oven until tender, about 1 hour.
2. Scoop the strands out of the skin.
3. While the squash is cooking heat the oil in a pan.
4. Add the onion and saute until tender, about 3-5 minutes.
5. Add the garlic and saute until fragrant, about a minute.
6. Add the chard and saute until it has wilted, just a few minutes.
7. Mix the squash, chard, green onions, egg, sour cream, cottage cheese, parmigiano reggiano, salt and pepper and pour it into a baking dish.
8. Top with the parmigiano reggiano.
9. Bake in a preheated 400F oven until it is bubbling on the sides and golden brown on top, about 30-40 minutes.

Spaghetti Squash Fritters
1/2 spaghetti squash
1 egg
1/4 cup flour
salt and pepper
small amount of oil for frying (I used cooking spray)

1. Bake Spaghetti Squash as above & remove innards.

2. Mix the squash with one beaten egg, flour and salt and pepper.

3. Drop by about 1/4 cup spoonfuls onto a hot frying pan. Flatten slightly with a spatula and fry on each side until golden brown.

Pajama gift idea

I recently came across Punjammies by the International Princess Project, and I thought what a great cause and what a really great gift. Every christmas my sisters and I get new pajama pants from our mom, it's just a cute little something we do, but this year, I'm going to request that my mom get us all a pair of Punjammies.

The International Princess Project welcomes these women into an after-care facility where they are taught marketable skills to rebuild her life. All proceeds from every Punjammie purchase goes straight to India to pay wages, provide living expenses, create savings accounts for the women, and provide holistic support and restoration to help them along in their healing process and to help in rebuilding lives shattered by modern-day slavery.

mango smoothie

I did a lunch-time run this afternoon, and I wanted to have a filling healthy breakfast to get me through the run and keep me full, since I have a client coming in after lunch and won't get to eat till much later. I made a version of the breakfast smoothie from runners world, but I used frozen mango and chia seeds. OMG. I love mangoes so much, and this just became my favorite smoothie. Make it as soon as you possibly can.

Mangoes can be hard to eat, so I frequently eat the Dole frozen mangoes as a snack or with vanilla ice cream. The Dole frozen mangoes are a great option when you just don't feel like dealing with the cutting up of the mango. But, nothing is near as good as a fresh mango, so here's the easiest way to cut it so you can use it in salsas, salads and your other favorite recipes.

In the middle is a long pit which spans almost the entire length of the mango, so you can't slice down the center. Instead you want to make two slices longways that are slightly off center so you will miss the pit, getting as close to the pit as you can without hitting it.
Now you should have two side slices and a thick center slice containing the pit. Slice off the other two smaller sides from the pit also.

You can use a paring knife to slice off any remaining mango meat on the pit, or just eat it right off the pit like I do. This is nice to snack on while you’re cutting the rest of the mango.

Now, the fun part. With a small paring knife, score the mango halves into cubes without cutting through the skin. The size doesn’t matter. I make mine pretty small, but you could do large chunks if you want. The key is not breaking the skin. You should be able to feel the tip of the knife hit the skin while you’re making your slices.

Using your thumbs, press the mango inside out and now you can break off little pieces with your fingers or spoon or use a knife and let the pieces fall into a bowl.

G.R.I.T.S

It was a G.R.I.T.S (Girl Raised in the South Night) in the Clark household. I finally put those green tomatoes to the frying pan and cooked us some scrumptious southern treats last night.

As a kid, I believe my diet consisted of cheese grits, macaroni and cheese, oatmeal, and chocolate milk. It blows my mind when people ask what a grit is. And in case you are about to google it, I’ll save you the trouble, grits are stoneground corn which you stir into boiling water and simmer until all the water is absorbed and you get a fluffy gritty textured substance. Stir in some cheese or butter and salt and you’ll be very happy.

When my grandparents, Lavon and Bertha, came to visit from their tiny town of Brewton Alabama, my favorite memory was coming downstairs to grandmomma working on her quilts and granddaddy stirring up some homemade grits or oatmeal on the stove. I’m pretty sure those were the most delicious breakfasts of my childhood, and definitely some of my best memories of granddaddy and grandmomma. I discovered Shrimp n grits a few years ago and I always order them if they’re on a menu. We even served them at our wedding along with some other southern staples.

So last night, I made my fave white cheddar dreamy creamy Shrimp n Grits, fried green tomatoes, and I got a little crazy and also made some homemade buttermilk biscuits. I was planning on making the fried green tomatoes for my mom, but she was busy last night and I had to hurry up and cook them, because two of my five tomatoes already turned red! I promised I’d try again for her next weekend.

So here’s what I did
Shrimp n Grits
2 cups water
1 cup chicken or vegetable stock
1 cup cream
1 cup grits
S&P
1 tbl butter
1 pound shrimp
3 slices turkey bacon or 1 turkey sausage link
½ cup diced onion
1 garlic clove minced
8 ounces grated white cheddar

Heat broth and water and add cream to heated broth. Bring to a boil.

Slowly pour grits into boiling broth mixture, whisking the entire time.

Reduce heat to low and whisk often to avoid sticking and scorching, until the grits are thick and very smooth. About 15-20 minutes. Stir in cheese until melted, and add a tablespoon of butter and let it melt in the center.

Cover and let sit over very low heat. If grits become too thick, add a little more cream or broth to thin.

Meanwhile, in large pan, cook bacon or sausage through, then remove and set aside. Add onion and garlic to pan and sauté until onion is transparent. Season shrimp with S&P and some cajun seasoning, then add shrimp to pan with bacon/sausage and cook for 3-4 minutes until shrimp are pink. Don’t overcook your shrimp or you’ll have a very unhappy husband!

Give the grits a good stir, spoon onto a plate and top with the shrimp mixture.

I served with some green beans because I needed some healthy greens to go with it.

Fried Green Tomatoes

4 large green tomatoes
2 egg whites
½ cup milk
½ cup flour
½ cup cornmeal
½ cup bread crumbs – plain or Italian for more flavor, or panko
S&P
oil for pan frying

Slice tomatoes to ¼ inch thick, throw out the ends

Whisk eggs and milk together in one bowl. Put flour on a plate by itself. Mix cornmeal and bread crumbs with salt and pepper on a separate plate. (I added a little Cajun seasoning here for some flavor)
Dip tomatoes in flour, then milk, then breadcrumbs to completely coat, and set on a plate for 10 minutes while oil heats up.

In a large skillet, heat up 1/8 inch canola oil over medium heat. Place tomatoes in skillet in batches of 4-6, so they’re not touching. Let fry for 2-3 minutes till they’re brown and then flip and fry the other side. Remove and place on papertowel covered plate to drain.

Serve with a remoulade sauce.

2.5 cups flour
4 tsp baking powder
½ tsp salt
1 tbls sugar
½ cup butter
½ cup milk

Mix dry ingredients, then add butter and cut in until crumbly, add in milk. knead over floured surface and cut out biscuits using a drinking glass for perfect biscuits or just spoon them out for rustic biscuits. bake at 450 for 9-12 minutes, until fluffy and golden.

these were just okay, I might try another recipe next time. But they were made extremely delicious when spread with Savannah Bee Company honey. That honey is like crack.
